What is a food safety observer?
A Food Safety Observer (FSO) is someone already working in the industry (eg. a qualified chef) who is hired to observe and provide feedback about chefs in training to ensure they uphold required food safety standards until they gain their own qualifications, plus assist them in the development of new recipes, much like a mentor.
